4 Servings (serving size: ¼ of total salad mix)
Ingredients:
8 cups, baby spinach, washed
1 small red onion, peeled, sliced thin
1 avocado, peeled, seeded, diced
1 cup red seedless grapes, halved
1 cup blueberries
1 cup blackberries
1 cup strawberries, hulled, quartered
1 navel orange, peeled, segmented
1 cup frozen artichokes, thawed
¼ cup pecans, chopped
¼ cup walnuts, chopped
¾ cup raspberries
1 teaspoon Dijon mustard
½ cup extra virgin olive oil
½ cup balsamic vinegar
¼ cup fresh cilantro, chopped
Directions:
- Place raspberries, Dijon mustard, extra virgin olive oil, cilantro, and balsamic vinegar in a blender and blend to emulsify.
- Place all other ingredients in a large salad bowl. Pour dressing over salad mix and toss to coat.
- Serve and enjoy.
